Steak Kabobs with Mushroom, Potato & Onion
Grilled Steak, Potato, Mushroom and Onion Kabobs. A meal on stick! What could be better?
Juicy Steak, Creamy Potatoes, Savory Mushroom and Sweet Onions. A hearty, satisfyingly meal, not only fun to make but they'll be a hit with the entire family!
Beef and Potatoes together is one of the most incredible pairing known to man kind.
The steak, potatoes and onion are marinated in a simple oil and vinegar combination and then skewered together with the fluffy potatoes. Its a savory sensation of flavors that will be sure to impress.
What you'll need:
1 pound of USDA CHOICE TOP SIRLOIN – Van Lith Ranch
8 ouces of mushrooms (cleaned and stem taken out)
1 pound of small potatoes - if you can't find the baby potatoes, cutting a small red potato into quarters would work just fine.
1 medium onion
1/4 cup Olive-oil
1/4 cup Balsamic Vinegar
3 cloves garlic, mined
1 tsp Salt
1 tsp Pepper
1 tsp of Rosemary
1/2 tsp Oregano
Skewers (soaked in water if you're using wooden)
Instructions:
1. Cut steak in 1 inch cubes, cut onion into 1 inch chunks
2.In a medium mixing bowl, whisk together the oil, vinegar, garlic, salt, pepper, rosemary, oregano. Add steak, mushrooms and onion to mixing bowl. Cover and refrigerate for at least 2 hours.
3. In the meantime, boil your potatoes in a pot of salted water until just tender, about 8 minutes. You do not want to overcook your potatoes as they will crumble when you start your skewering process. Drain and cool enough for you to handle. I did a quick toss in a tablespoon of olive oil before skewering.
4. The fun part begins! Thread the marinated steak, mushrooms and onions along with the par cooked potatoes onto your skewers.
5. Heat grill to medium-high heat, Grill Kabobs 5-7 minutes on both sides to your desired doneness. Serve right away & Enjoy!
